Fast & Easy Greek Bowl

This recipe is one of my faves. It's super quick, filling, and oh so yummy! When I whip this up for lunch, I use brown rice or quinoa for those complex carbs to keep me energized and keep my brain on point. For supper, I swap the grains for some cauliflower rice.

 

  • 4 cups cooked chicken
  • 2 cups cooked cauliflower rice, or any cooked grain
  • 1 cup chopped English or Persian cucumber
  • 1 cup halved cherry tomatoes
  • 1 cup sliced red or orange bell pepper
  • 1/4 cup thinly sliced red onion
  • 1/4 cup kalamata olives
  • 1/4 cup crumbled feta cheese
  • ½ cup Tzatziki sauce

Divide the cauliflower rice or grain between four bowls. Top each with the cooked chicken, cucumber, tomatoes, bell pepper, red onion, olive, and feta. Drizzle with the Tzatziki sauce and serve.

 

For the Tzatziki sauce: (I use a food processor or Ninja and combine all the ingredients)

 

  • 16 ounces Greek yogurt
  • 1 cucumber, peeled and grated
  • 1 garlic clove, minced
  • 1 Tbs fresh parsley, chopped
  • 1 Tbs fresh lemon juice
  • salt and pepper to taste
